Everyone has been emailing me non-stop, wailing about holiday weight gain, exercise, food, etc. One of you gained 30 lbs in a week, and I think someone else may have died after spending 4 hours on the elliptical. This is not good, guys! SO, I thought I would generously bestow upon you one of my favorite healthy dinner recipes: The Nothing Salad. The great thing about The Nothing Salad, is that most of the ingredients are optional, so you can customize/personalize it. I’ve included my favorite way to prepare the salad, with a list of the optional ingredients below. So delish. So filling.

THE NOTHING SALAD
- Preparation time: 3-20 minutes (depending on how many ingredients you use)
- Serves: 1
INGREDIENTS:
10 leaves of organic butter lettuce
Squeeze of lemon juice
DISCOURAGED OPTIONAL INGREDIENTS:
1/4 cup sliced red onion
1/2 avocado
1/4 cup toasted pine nuts
1 tomato, finely chopped
1/2 cucumber, peeled and finely chopped4 oz. baked chicken breast
1/4 cup sprouts
INSTRUCTIONS:
Toss ingredients together in large bowl. Serve with a hearty side of chicken broth. Yum! So cozy.
