Someone recently had the audacity to say that I only care about kale. A) Fuck you, Dad. And B) That’s just so not true. Kale just so happens to be the leafy green that I connect to the most. It’s so versatile! Basically the Little Black Dress of greens. It can be ingested in smoothie form, raw form, chip form, boiled form, etc. and I respect that. However, out of a responsibility to my readers, I feel like it’s important that you guys know that I completely understand the importance of having a balanced and nuanced diet. It’s so unhealthy to focus on one thing and one thing only. Therefore, I want to share some other foods that I’m passionate about:
Swiss Chard is Beet Greens’ crazy, lesbian cousin. While the roots aren’t edible, it’s still one of the healthiest leafy greens out there. It’s also great to look at and not eat at all.
Spinach is a total duh.
One of my all-time, favorite dishes is butter lettuce salad with a lemon-shallot vinaigrette.
I fucking love cilantro. Sometimes if I’m in a rush and need a quick snack I’ll just grab a handful and chow down as I’m running out the door. So flavorful.
See? I’m a multifaceted person with tons of affection and love for all things green, not just kale. So before you go around putting your fucking blanket statements on me, think about how it’s going to make me feel.
